2 packs Salame Brianza DOP

4 eggs

3 leeks

100 gr. cow’s milk ricotta.

40 gr. parmesan cheese

15 dl. milk

200/250 gr. ready-to-use puff pastry

as needed extra virgin olive oil

as needed salt

as needed pepper

 An easy-to-prepare quiche with a unique taste


Clean the leeks and cut them into slices.
In a pan with some oil sauté the leeks over medium heat for about 15-20 minutes. Add a splash of water if it starts to stick.
In a bowl combine eggs, leeks, ricotta, parmesan cheese, milk, and the Salami Brianza DOP broken into small pieces and season with salt and pepper. Stir well..
Roll the pastry out in a round pie plate, prick it all over with a fork and pour the mixture over it.
Bake in conventional oven at 250° for 15 minutes.
Serve warm with green salad.
