Mortadella is the result of a mix of pork and spices skilfully measured, processed using cutting-edging technology, and delicately cooked to make a product with high quality in the best Italian tradition. Instead of common thinking, mortadella is considered by many nutritionists to be a healthy sausage with a cholesterol content near to that of the best white meat with a high degree of  satiability, good content of proteins, and therefore recommended in balanced diet.

MORTADELLA BOLOGNA IGP IGP
Mortadella di Bologna

Mortadella IGP is produced esclusively with selected cuts of porc meat following  the strict regulamentations of the guideline. The lean part, grounded very finely to obtain a creamy paste, and the fat one,  reduced in cubes and worked in warm water to eliminate the less fine parts, together originate the mix. Then you mix secret natural spices, fragrant pistachio nuts, we put it into bags and we cook it till it reaches the optimal temperature. We let it cool, at first with a shower, then in specific temperature cooler to assure a progressive and a uniform decrease of the temperature. Now, the Mortadella IGP is ready to be tasted in parfumed slices with a nice uniform pink color, with a smooth and soft consistency, with cubes of with well defined and arranfged fat.

PROSCIUTTELLA
Prosciuttella

Prosciuttella has been prepared with the same cuts of the mortadella. The cubes of lean ham are added to the traditional mix, hen put it into cases, pressed, and steamed slowly just like the “classic” version. When cut, the ham cubes are clearly visible and give the slice a unique and delicate taste.
